Many operators have found that the key to success is to use selected prepared food products along with scratch-made items.In healthcare kitchens, the move away from patting out raw meat for burgers to using fully cooked burgers has been a natural progression. Take the high-volume burger bar at lunch at 750-bed Baptist Hospital in Miami, a showcase for the speed-scratch advantage of fully cooked burger patties.At Baptist, rethermalized patties are held in a little beef broth at the bar, ready to serve. “The burgers are all lined up, nice and moist and flavorful, and you turn over a burger to a customer every 20 seconds,” says Stan Hodes, executive chef and manager of dining services operations at Baptist. Customers have a choice of several buns, cheeses and garnishes on the line, and they then move to a condiment bar to finish dressing their burgers.This increase in efficiency and holding capability was instrumental the day Hodes served 3,000 free burgers to employees for a hospital event. “I was able to control the cost, because there was no shrinkage,” says Hodes. “When you do an event with 3,000 meals, every detail is a big detail.”Fully cooked burgers also figure prominently in the menus of Golden Living, a Plano, Texas-based operator of 300 living centers for recovery care that average about 75 beds. The burgers were part of a wide-ranging menu upgrade that increased the quality, variety and number of choices for patients.Now that patients can choose burgers and other items they enjoy, they are less likely to leave meals uneaten or to call the kitchen for special orders, reports Chef Darin Leonardson, director of hospitality and dining for Golden Living. That has resulted in a “huge” reduction in wasted food, Leonardson says. “We’re now able to order and produce what is actually needed, drastically improving our food cost. And our customer satisfaction scores went up because people are ordering what they like.”Leonardson, a former chef in high-end restaurants, admits that he did not think much of fully cooked burgers until he tried one. “I said, ‘This is amazing. This is really good.’ I put aside my ego as a chef and thought about the efficiency and the cost savings, too.”“To have a burger that consistently tastes the way we want, we decided on the precooked burger, especially if it is being held on the line in au jus,” says Leonardson. “It just really holds well.”Speed-scratch solutions such as these also give operators confidence with food-safety regulations. “Raw meat is something that has to be handled with great care to maintain its wholesomeness and safety,” says Hodes. “But I don’t have the luxury of a dedicated kitchen space or dedicated staff to handle raw meat.”Thus, Baptist Hospital uses fully cooked burgers. “I feel that any skill set in my kitchen can manage the safety of this product,” Hodes says

Menus – no matter how extensive – don’t always satisfy consumer preferences.Outside of self-service buffets and salad bars, substituting a side dish, holding the tomato or asking for a dish blackened characterized the level of menu customization to which consumers used to be accustomed. Today, consumers revel in their ability to build their meal from what is typically a fairly simple menu.Sometimes referred to as the “Subway model” or the “Chipotle style” of service, sales growth of these build-your-own formats – where customers move down a line, customizing their meals at each step – has outpaced that of the entire restaurant industry nearly 6:1, a stat revealed by food industry research and consulting firm Technomic in 2015.Subway quietly surpassed McDonald’s in 2010 to become the largest fast food chain worldwide thanks to decades of build-your-own success. No matter the fare, the build-your-own approach offers customers three distinct qualities: fresh-made appeal, variety and control.Fresh-made appeal: With selections of colorful ingredients (that imply freshness) on full display, consumers appreciate that their meals are assembled in front of their very eyes, alleviating any concern that the meal was prepared earlier in the day and growing stale under a warmer.Variety: Even the pickiest eaters appreciate the plethora of choices for the taking at a build-your-own counter. Despite the limited core offerings for these establishments – whether subs, burritos, pizzas, rice bowls or some other base for the DIY concept – consumers’ ability to mix and match toppings makes the menu feel infinite.Control: Building a meal – and viewing its assembly – means no surprises. It’s made to order and ingredients selection and other specifications (e.g. extra cheese and light onion) put consumers in control. And when adhering to a specific diet – whether avoiding meat, carbohydrates, gluten, etc. – this uncomplicated format caters to consumers without making them feel high-maintenance.Bottom line, whether quick-service or fast-casual, expect continued growth of the build-your-own concept in foodservice operations in the coming years. The “my way” mentality and value placed on transparency by the millennial generation is a key driver of this trend and will continue to push the industry into exploring more customer-centric dining solutions.

Tomato, tomahto.So, let’s look under the knife.Technomic’s Top 500 Burger Report examined operators that focus on burgers within the limited-service space. It found that, from 2009 – 2014, QSRs have seen 2.2 percent growth, LSRs have seen 2.5 percent growth and fast-casual burger chains have experienced 15.4 percent growth. There’s a clear opportunity in the fast-casual space for suppliers when it comes to burger offerings.What’s on the menu at these fast-casual places? MenuMonitor finds that premium, specialty burgers have a larger menu presence than other burger offerings and are growing in menu mentions at more than eight percent.But what makes a burger premium? Technomic reports that 46 percent of consumers (62 percent of millennials) agree that specialty toppings make a burger premium, and 44 percent of consumers (56 percent of millennials) agree that a large quantity of toppings makes a burger premium.Popular specialty toppings include avocado, fried egg, pulled pork and beef brisket, and consumers are willing to pay extra for them: $1.10, $1.20, $1.50 and $1.80, respectively (Technomic).Further, with a nod to increasingly popular ethnic tastes and flavors, Sriracha sauce is one of the fastest-growing ingredients mentioned in burger offerings. It experienced a 59 percent YOY growth in Q1 2016. Other unique ingredients on Technomic’s YOY fastest-growing burger offerings list include: remoulade (+41 percent), short ribs (+25 percent), chorizo (+22 percent) and brioche (+22 percent).This much is true: the burger’s appearance, in many instances, has changed quite a bit from the way it looked not so many years ago (just make sure you compliment the chef the next time you see one).
